Simple Thanksgiving Turkey Leftover Recipes

Turkey Hash Brown Bake
from Nestle Very Best Baking


Just pop in the oven and enjoy time with your family while dinner is baking.

This scrumptious meal couldn't be easier! Simply mix a few ingredients and bake until golden The result? A whole meal in one dish!


Ingredients
  • 1 bag (16 oz.) or 4 1/2 cups frozen, shredded hash brown potatoes
  • 2 cups chopped frozen or fresh broccoli
  • 8 ozs. sliced turkey, cut into 1/2-inch pieces (about 2 cups)
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 1 can (10 oz.) condensed fat-free cream of chicken soup
  • 1/2 cup shredded Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon ground black pepper

Directions
PREHEAT oven to 350º F. Grease 13 x 9-inch baking dish.

COMBINE all ingredients in large bowl until well blended. Pour into prepared baking dish.

BAKE for 50 minutes or until heated through. Cool for 10 minutes before serving.

TIPS:
• When you visit the deli counter, ask for the amount of turkey you’ll need and it can be cut into one thick piece.

• Looking to reduce the fat? Use NESTLÉ® CARNATION® Lowfat 2% or Fat Free Evaporated Milk in place of the evaporated milk for creaminess but with less fat.

Turkey Tetrazzini
An easy meal to make when time is limited without sacrificing great taste.
Ingredients
  • 8 oz. dry spaghetti, prepared according to package directions, kept warm
  • 1/4 cup dry bread crumbs
  • 3 tablespoons butter or margarine, divided
  • 3/4 cup (2.25 oz.) BUITONI Refrigerated Freshly Shredded Parmesan Cheese, divided
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1 can (14 1/2 fl. oz.) chicken broth
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 2 cups cooked, chopped turkey breast meat
  • 2 cans (4 oz. each) sliced mushrooms, drained
  • 1 cup frozen peas, thawed
  • 2 tablespoons dry sherry

Directions
PREHEAT oven to 350° F. Lightly grease 13 x 9-inch baking dish.

COMBINE bread crumbs and 2 tablespoons butter in small bowl. Stir in 1/4 cup cheese.

MELT remaining 1 tablespoon butter in medium saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. Stir in flour, salt and pepper; cook, stirring constantly, for 1 minute. Remove from heat; gradually stir in broth. Return to heat; bring to boil over medium heat, stirring constantly. Stir in evaporated milk and remaining 1/2 cup cheese; cook over low heat until cheese melts. Remove from heat. Stir in turkey, mushrooms, peas and sherry.

COMBINE pasta and turkey mixture in large bowl. Pour into prepared baking dish. Sprinkle with bread crumb topping.

BAKE for 20 to 25 minutes or until topping is lightly browned. Serve immediately.

Turkey Cranberry Encore Salad

Make any mixed green salad a little tart and sweet with the bounty of cranberry sauce you’ll have on hand during the holidays. This salad easily transitions into a main dish with its shredded turkey and a generous sprinkle of walnuts. It’s the perfect lighter fare so many of us are looking for after an indulgent holiday meal.

Ingredients
  • DRESSING
  • 2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup jellied or whole-berry cranberry sauce
  • 1/4 cup Italian salad dressing
  • SALAD
  • 1 bag (10 oz.) mixed salad greens of your choice (about 10 cups)
  • 2 cups (about 10 oz.) cooked turkey, cut into 1/2-inch pieces
  • 1/2 cup (2 oz.) crumbled blue cheese
  • 1/3 cup dried sweetened cranberries
  • 1/2 cup chopped toasted walnuts (optional)

Directions
FOR DRESSING:
PLACE evaporated milk, cranberry sauce and Italian dressing in small jar or container; cover tightly with lid. Shake for 1 to 2 minutes. Makes about 1 1/2 cups. (Dressing can be made in advance and refrigerated for up to 2 days. Shake well before using.)

FOR SALAD:
TOSS greens, turkey, blue cheese and 3/4 cup dressing in large bowl. Sprinkle with cranberries and walnuts. Serve immediately and additional dressing, if desired. Refrigerate any remaining dressing.

TIP:
For a smoother dressing, prepare in blender.
