The Shot I Want For My Kid

We all dream of our kids getting a Shot at being accepted for who they are in life.

I stumbled across this video for the 2nd time now and once again was brought to tears. Tears because I saw my own child in this video, my own puzzle boy who day in and day out attends school, plays video games, builds legos, rides a bike goes to Cub Scouts just like every other little boy his age except Caleb does most of it alone.

Last week, I was able to go on a field trip with Caleb and his class mates. I love hanging out with my little guy and it gave me the opportunity to observe if Caleb was getting the shot he needs

My observations made me realize the lack of training our schools give to both teachers and students on inclusion integration.

I observed my child having no one to sit with to eat his lunch.

I was given a list of children to chaperon that my child had no idea who they were.

I was given 2 additional children besides my own which meant a group of 3. We all no what happens in a group of 3 especially when one is a puzzle child.

When the field trip organizer asked the children to get in pairs who would be left standing alone? Yes, my little puzzle boy. Which resulted in the class teacher then placing him with two children that we and the resource teacher have asked him to not be placed with

I observed a child playfully hitting my child in the minds of others. But, this mom knows it was not playful it was the classic picking on a child who doesn't understand when someone is being mean to him.

All of these observations have brought a slew of questions to us as a family and our research has begun once again as to the best placement for Caleb to get a shot.

What we dream of is our little boy getting a shot in life just as you see in this video a team that accepts and understands a puzzle boy. Teachers, coaches, classmates and parents who are willing to give him a shot.

Valentines Lunch Time Fun

Serve a Red and Pink lunch for your family this Valentines Day with these simple ideas:

Heart Sandwich

Ingredients
2 slices of bread per sandwich
Fillings for sandwich - you can choose anything from peanut butter to lunch meats.
Heart cookie cutter 3 1/2''

Directions
1. Using heart shaped cookie cutter cut our a heart in the middle of each slice of bread

2. Create a sandwich using the heart shaped bread.

Heart cheese and crackers

Create heart shaped cheese slices and serve with crackers. Use a small heart shaped cookie cutter to cut out heart shapes on pre-sliced cheese. Also try cutting lunch meat into heart shapes.


Valentine Creamy Jello Jigglers

from: Jello

What You Need!

2-1/2 cups boiling water
2 pkg. (8-serving size each) JELL-O Gelatin, any red flavor
1 cup cold milk
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding

Make It!

STIR boiling water into dry gelatin mix in large bowl at least 3 min. until completely dissolved. Cool 30 min. at room temperature.

POUR milk into medium bowl. Add dry pudding mix. Beat with wire whisk 1 min. Add to gelatin; stir until well blended. Pour into 13x9-inch pan.

REFRIGERATE 3 hours or until firm. Dip bottom of pan in warm water 15 sec. Cut into 24 decorative shapes using 2-inch heart-shaped cookie cutters, being careful to cut all the way through gelatin to bottom of pan. Lift JIGGLERS® from pan. Store in tightly covered container in refrigerator.

Heart Fruit

Slice up strawberries and Bananas into heart shapes.


Red and Pink additions

Pink Yogurt or Go-gurt

Pink Smoothies

Red Apple slices

Cherry tomatoes with ranch dip

Tortilla chips with salsa

Pink juice box

Strawberry Milk

Breakfast Full Of Hearts This Valentines Day

Valentine Bagel and Cream Cheese

Super Simple and yummy

Ingredients

1 bag of store bough bagels

1 container strawberry flavored cream cheese

Strawberries

Directions

1. Split bagel in half

2. Place heart shaped cookie cutter on top of bagel, fill with 1 -2 tbs cream cheese and spread into cookie cutter. remove cookie cutter. You should now have a heart shape of cream cheese.

3. Remove stems from strawberries, Slice whole strawberries in half , cut a V at top of berry to create a heart looking berry. Now place your heart shaped strawberry in the middle of the cream cheese.


Heavenly Heart Shaped Pancakes

Ingredients:

2 1/2 cups all-purpose flour
1 cup (6 ounces) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups milk
2 large eggs
1/3 cup vegetable oil, plus more for the griddle and cookie cutters
1/3 cup packed brown sugar
3-inch heart-shaped metal cookie cutters (optional)
Powdered sugar

Directions

COMBINE flour, morsels, baking powder and salt in large bowl. Combine milk, eggs, oil and brown sugar in medium bowl; add to flour mixture. Stir just until moistened (batter may be lumpy).

HEAT griddle or skillet over medium heat; brush lightly with oil. Pour 1/4 cup batter onto hot griddle into the shape of a heart; cook until bubbles begin to burst. Turn; continue to cook about 1 minute longer or until golden. Repeat with remaining batter. (For perfectly shaped pancakes, brush inside of cookie cutters with oil; place on griddle. Pour about 1/4 cup batter into the cookie cutters and cook until bubbles begin to burst. Remove cookie cutters. Turn; continue to cook about 1 minute longer or until golden.)

SPRINKLE with powdered sugar before serving.


Heart-Shaped Eggs and Toast

Why settle for ordinary eggs and toast when you can show your love with this version?

Using a 3-inch heart-shaped cookie cutter, remove the center of a thick slice of bread, and toast it. Melt 1 1/2 teaspoons butter in a small skillet over medium heat. Place bread slice in skillet, and cook until underside is lightly browned. Add another 1 1/2 teaspoons butter, and flip bread. Fit cookie cutter, coated with cooking spray, in bread's cutout heart, and crack an egg into cutter. Cover skillet, and cook until egg is set, 2 to 3 minutes. Use tongs to remove cutter. Serve with toasted heart for dipping into yolk.

Cut-Out Heart Scrambled Eggs

Ingredients:

  • 2 eggs
  • 2 Tbsp. milk
  • 2 Tbsp butter
  • Salt and ground white pepper, to taste

Directions

Preparation:

  1. Crack the eggs into a glass mixing bowl and beat them until they a light yellow color.

  2. Heat a heavy-bottomed nonstick sauté pan over medium-low heat. Add the butter and let it melt.

  3. Add the milk to the eggs and salt and pepper. Whisk mixture fro about 2-3 minutes . Or you can use an electric beater or stand mixer with the whisk attachment. Whatever device you use, you're trying to beat as much air as possible into the eggs.

  4. When the butter in the pan is hot enough to make a drop of water hiss, pour in the eggs. Don't stir! Let the eggs cook for up to a minute or until the bottom starts to set.

  5. With a heat-resistant rubber spatula, gently push one edge of the egg into the center of the pan, while tilting the pan to allow the still liquid egg to flow in underneath. Repeat with the other edges, until there's no liquid left.

  6. Your eggs should now resemble a bright yellow pancake, which should easily slide around on the nonstick surface. If it sticks at all, loosen it with your spatula.

  7. Now gently flip the egg pancake over, using your spatula to ease it over if necessary. Cook for another few seconds, or until there is no uncooked egg left.

  8. Turn off heat and take heart shaped cookie cutters of various sizes and cut-out heart shapes of your omelet...My version of Scrambled eggs.

Cut-out Heart French Toast

Ingredients

6 1" thick slices bread
1/4 c Milk
2 Eggs, beaten
1/2 ts Almond extract
2 tb Butter or margarine
Powdered sugar
Fresh strawberries

Directions

1. Using a 3 1/2" Heart cookie cutter cut out heart shapes from each bread slice.

2. Whisk milk, eggs and almond extract in a shallow dish until to make your egg mixture.

3. Dip each heart shaped bread slices into egg mixture, coat both sides

4. Melt 1 tablespoon butter in large skillet or hot griddle; Places slices of bread ( hearts) in pan or on griddle and cook over medium heat about 3 minutes on each side or until golden. Transfer to a oven safe plate or dish , and keep warm in oven at 175 degrees..

Sprinkle heart French toast with powdered sugar and garnish with strawberries .



Cranberry Kissed Cinnamon Rolls
From : Cooks Recipes
2 (1 pound each) frozen white yeast bread dough, thawed - divided use
2 tablespoons butter, softened - divided use
1/4 cup granulated sugar
1 1/4 tablespoons ground cinnamon
2 cups (12 ounce package) NESTLÉ® TOLL HOUSE® Premier White Morsels - divided use
1 cup sweetened dried cranberries, coarsely chopped - divided use
1 cup powdered sugar, sifted
3 tablespoons milk
  1. Grease two 9-inch-round baking pans.
  2. Roll 1 bread loaf into 16 x 10-inch rectangle on lightly floured surface.
  3. Spread 1 tablespoon softened butter over dough. Combine sugar and cinnamon in small bowl; sprinkle 2 tablespoons over dough leaving 1/2-inch border around sides. Sprinkle with 3/4 cup morsels and 1/2 cup cranberries, firmly pressing morsels and cranberries into dough.
  4. Roll up dough tightly, starting at short end; seal edges with water. Cut into 6 slices; place cut side up in prepared baking pan. Repeat with remaining bread loaf, butter, sugar mixture, 3/4 cup morsels and cranberries; place in second prepared baking pan. Cover; let rise in warm place until dough almost fills pans, about 30 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Bake for 25 to 30 minutes or until golden brown. Cool for 15 minutes in pans on wire racks.
  7. Melt remaining morsels in small, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 30 seconds; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10 to 15-second intervals, stirring just until morsels are melted. Stir in powdered sugar and milk to make a stiff glaze. Drizzle over cinnamon rolls.

Crockpot Apple Oatmeal

Prep Time: 20 minutes

Cook Time: 9 hours

Ingredients:

· 2 cups milk

· 1/4 cup brown sugar

· 1 Tbsp. melted butter

· 1/4 tsp. salt

· 1/2 tsp. cinnamon

· 1 cup regular oats (not quick cooking or instant)

· 1 cup peeled, chopped apple

· 1/2 cup chopped dates or raisins

· 1/2 cup chopped walnuts

Preparation:

Spray the inside of a 3-4 quart slow cooker with nonstick cooking spray. Combine all ingredients in the slow cooker and mix well. Cover and turn on LOW setting. Cook 5-7 hours until oatmeal is tender. Stir well before serving. 8 servings

Fat: 8 grams
Sodium: 120 mg


Freezer Breakfast Burritos

You can vary the additions to this recipe for breakfast burritos. Add onions or frozen hash brown potatoes, omit the salsa, try using different types of cheese or flavored tortillas. The possibilities are endless!

Prep Time: 25 minutes

Cook Time: 15 minutes

Ingredients:

· 12 eggs

· 2 Tbsp. butter

· 1 lb. pork sausage, cooked and drained

· 1/2 cup chunky salsa

· 2 cups Cheddar or Pepper Jack cheese

· 24 flour tortillas

Preparation:

In large skillet, melt butter. Beat eggs in large bowl and add to skillet. Cook eggs in butter, stirring frequently, until scrambled and set. Add cooked sausage and salsa to egg mixture and mix gently.

Warm tortillas as directed on package. Place about 1/2 cup egg and sausage mixture onto each tortilla and sprinkle with some cheese. Roll up each tortilla to make burritos, folding in the ends and rolling up. Place on parchment paper lined cookie sheets and freeze until solid. Then wrap individually and package in zip-lock freezer bags.

When you're ready to eat, unwrap the burritos, wrap loosely in microwave safe paper towel and heat in the microwave on high power for 1-3 minutes until hot and cheese is melted.

You can also thaw burritos in the refrigerator overnight, then wrap each in foil and bake at 350 degrees for 10-15 minutes until hot. The thawed burritos can also be deep fried for 3-5 minutes until golden brown and crisp. 24 burritos


“Berry-Cherry Groovy Smoothie”

Ingredients:

1/2 cup strawberries, raspberries, and cherries with pits removed (fresh or frozen)

1/2 cup plain low-fat yogurt

1/4 cup apple juice

Directions:

Toss your fruit into the blender.

Add the yogurt and then the apple juice for a little sweetness. If you're using fresh fruit (not frozen), add a few ice cubes as well.

Now it's time to bounce! Switch on the blender and watch all of that fruit bounce around.

Pour each smoothie into a tall glass and finish off with a straw.

My name is Laura Miranti and I have four great kids- Slone, Marren, Lucia, Lorén and a wonderful husband, Chris.
I spend my days juggling kids’ activities, work responsibilities, household duties, and an occasion workout.
